We made it this past weekend on a lazy Monday morning. You really cannot tell that it is gluten free and vegan, to me it tastes just like a normal coffee cake!
And I thought coffee cake meant that the cake HAD coffee in it. False. It means you eat it WITH coffee. I’m sure all of you knew that, but it was news to me!
We used the recipe from Betty Crocker, using their gluten free biscuit mix.
Substitute flax eggs for the eggs called for in the recipe.
